An Easy Recipe for Moist Chicken Breast

This recipe makes enough chicken for two people. A nonstick stainless steel skillet is best to use, if you have one. The amounts of broth, flour and olive oil are approximate and it depends on the size of the breasts and the size and shape of your skillet.

Serve this delicious poached chicken with mashed potatoes and fresh vegetables for a wholesome and delicious dinner. You can use any herbs you like, so feel free to substitute the rosemary and oregano for parsley, cilantro, thyme or even a pinch of mixed herbs.

You will need:

2 chicken breasts
1/2 pint chicken broth
Salt and black pepper
1/2 cup all purpose flour
1 tablespoon olive oil
1 clove garlic, crushed
1 teaspoon lemon juice
1/2 onion, chopped
1/2 teaspoon dried rosemary
1/2 teaspoon dried oregano

How to make it:

Sprinkle salt and pepper over the chicken and then dredge them in flour, shaking off the excess. Preheat a skillet over a medium heat until it can evaporate droplets of water you drop into it. Pour a little olive oil into the pan. You could also use canola oil or any fat with a high smoke point. You should coat the bottom of the pan with oil but that is enough.

Add the chicken breasts to the hot pan and sear them for a couple of minutes until they are golden brown. Turn them over and sear the other side. If you are going to double this recipe, do two chicken breasts at a time. Crowding the skillet means you will not be able to brown all your chicken properly.

Turn the heat down to low, and then add chicken broth. It needs to come a third of the way up the chicken breast. If you add to much you will be boiling the chicken, which is not what you want. Add the onions, rosemary, oregano, garlic and lemon.

Cover the pan with a lid that fits tightly and cook the chicken breasts over a low heat until they are done. They are done when a meat thermometer reads 165 degrees F in the thickest part of the chicken breast. If you do not have a meat thermometer, cut into the chicken. It is done when it is white all the way through with no hint of pink in the middle.

Ingredients

1 hen, about 4 pounds, cut into serving pieces

Salt and cayenne

2/3 cups vegetable oil

1/2 cup all-purpose flour

2 cups chopped onions

1 cup chopped bell peppers

4 to 5 cups warm water or chicken broth

2 bay leaves

1/4 cup chopped parsley

3 tablespoons chopped green onions

Steps

Season the chicken pieces generously with salt and cayenne. Set aside. In a large black iron or stainless steel pot, make a roux by combining the oil and flour over medium heat. Stir constantly for about 20 to 25 minutes, or until it is dark brown. Add the onions and bell peppers. Cook, stirring often, for about five minutes, or until they are soft. Add the chicken pieces and stir to coat well with the roux mixture. Cook for about five minutes. Slowly add the water or broth. Add the bay leaves. Bring the mixture to a boil, reduce the heat and simmer for about two hours, or until the chicken is tender. Adjust seasonings. Remove the bay leaves. Add the parsley and green onions and serve immediately. Serves about 8.

Cajun Alligator Etouffee Recipe

2 onions, chopped

2 cloves garlic, minced

4 stalks celery, chopped

1 can tomatoes

1 pound alligator meat, cut in thin strips

1 cup (2 sticks) butter

1/2 cup green onions, chopped

1/4 cup parsley, minced

Salt

Cayenne pepper

Black pepper

Sauté onions, garlic and celery in butter until soft. Add tomatoes and simmer for twenty minutes in covered iron pot.

Add alligator meat and let cook over low heat until tender, about 1 hour. If gravy is too thick, add a little hot water. Serve over rice.

Craw Fish Fettuccine I

6 tablespoons butter

1 large onion, chopped

1 green bell pepper, chopped

3 stalks celery, chopped

1 clove garlic, minced

1 tablespoon all-purpose flour

1 pound peeled craw fish tails

1 (8 ounce) package processed cheese food

1 cup half-and-half cream

2 teaspoons Cajun seasoning

2 teaspoons cayenne pepper

1 pound dry fettuccine pasta

1/2 cup grated Parmesan cheese

Melt the butter in a large skillet over medium heat. Cook onion, bell pepper, celery, and garlic in butter until onions are tender. Stir in flour, and cook for 5 to 10 minutes, stirring frequently. Stir in craw fish. Cover, and simmer for 15 to 20 minutes, stirring often. Stir in the processed cheese, half-and-half, Cajun seasonings, and cayenne pepper. Cover, and simmer for about 20 minutes, stirring occasionally. Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Stir noodles into craw fish mixture; pour into prepared dish, and sprinkle with Parmesan cheese. Bake in a preheated oven for 20 minutes, or until hot and bubbly.

Snacks:

Black Bean Salsa

1 can 15 oz. black beans, drained

1-1/2 cups canned corn, drained

2 medium tomatoes, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

1/2 cup red onions, diced

1 to 2 jalapenos, diced

1/2 cup fresh lime juice

1/2 cup olive oil

1/3 cup fresh cilantro

1 teaspoon salt

1/2 teaspoon cumin

1/2 teaspoon cayenne pepper

Mix all ingredients together. Allow to sit in refrigerator a few hours before serving. Makes a wonderful dish for chips or topping for enchiladas or burritos.

Cajun Crab Crisp

12 English muffins

1/2 cup butter

5 oz Old English cheese (jar)

1-1/2 tsp mayonnaise

1/2 tsp garlic salt

2 tsp Konriko seasoning

1 tsp Tabasco

1-1/2 lb white crab meat

Melt butter and mix all ingredients together and spread on split and quartered English muffins. Bake at 350F in oven for 15 to 20 minutes or until toasted and golden brown.

Craw fish Cornbread Muffins

1 med onion, minced

1/4 lb butter

1 clove garlic, minced

1 lb craw fish tails

8 green onions, minced

One 16 oz Jalapeno Mexican cornbread mix

Salt, cayenne pepper, and garlic powder to taste.

Saute onion in butter until tender. Add garlic, craw fish tails, and seasonings. Cook over low heat for 15 minutes. Add green onions. Cook for five minutes. Prepare cornbread mix according to the directions on the package. Add craw fish mixture, stir well. Spoon into greased mini muffin tins. Bake at 350F for ten minutes.

Let’s not forget the recipes for when you get thirsty from all that delicious food.

Drinks:

Festivity Punch

5 lb of sugar

3-1/2 qt of water

2 tbs citric acid diluted in 1 pint of water

Four 46 oz cans pineapple juice

Four 46 oz cans orange juice

Two 46 oz cans grapefruit juice

Make a syrup of sugar and 3-1/2 qt of water letting boil about 2 hours. To this add citric acid which has been diluted in 1 pint of water, To this base add pineapple juice, orange juice and grapefruit juice.

Let mixture sit in crock with big piece of ice several hours before serving. Cherries are optional.

Makes One hundred 6 oz glasses

White Wine Sangria

1/2 gallon white wine

5 cups Sprite

1/4 cup simple syrup

1/2 cup orange juice

1/4 cup brandy

1 whole apple, banana, orange, sliced

Mix all ingredients together. Add sliced fruits. Chill and serve.

1. 1 1/2-2Lbs of lean ground beef. It should be 10% or less if you can get it.

2. 4 garlic bulbs finely chopped.

3 tablespoons of either California or New Mexico chili powder.

1 dash of cayenne for added heat if you like. The thermogenics and metabolism boost from it is good too!

I tablespoon of cumin.

1 teaspoon of smoked paprika.

1 large can of fire roasted tomatoes diced up. These cans are either 26 to 28 oz.

2 15oz can of some kind of red bean either kidney or Louisiana red bean. Pinto beans will do in a pinch though.

1 large onion chopped fine. Either a brown or red onion the choice is yours.

1 1/2 of a cup or more depending on taste of canned diced chilies. The Hatch chili variety is best in my opinion.

3 to 4 tablespoons of tomato paste.

1 or 2 dashes of Worcestershire sauce.

1 one little dash of salt or sea salt or even season salt, or you can leave the salt out for your guests to add themselves. I know salt make you hold water, but is some cases you just have to have some to bring the flavors of your food out.

OK! Lets cook:

1. Get your hands on a large skillet of either the no stick, stainless steel or my favorite a cast iron skillet and take your very lean ground beef and brown it up. When the beef is browned and not burned, it is time for you to drain off the excess fat from the skillet. I usually put the beef in a bowl and then take another bowl and place it on top of the bowl with the beef and squeeze down and tip sideways over the sink and squeeze all that extra fat out of the beef. I leave what little grease is still in the pan and if there is too much I drain it out until only a slick remains.

2. Now it is time for you to put the beef back into your skillet and put the garlic, chili powder, and cumin in for you to mix together on a low medium heat. When the total ingredients in the skillet are hot and simmering as you can tell from the little bubbles on the sides of the skillet it will be time for you to add y our tomatoes, onions, chilies, beans, and tomatoes to the recipes and stir them together and let them blend. It is good to let this mixture cook for 2 to 4 hours on low simmer and you should check it every now and again with your spoon to see if you want to add anything to this recipe. About ten minutes before the dish is done add your Worcestershire sauce, smoked paprika and salt. Keep on low for another thirty minutes and then turn the heat off and let the flavors marry to each other. When your guests arrive it is chow time!

– 8 cups beef broth
– 2 onions, coarsely chopped
– 2 white turnips, in 1 inch (2.5 cm) cube cut
– 2 stalks celery, cut into 12-inch (2.5 cm) pieces
– 1 leek (white part only) chopped
– 1 cup sliced mushrooms
– A quarter cupButter
– A quarter teaspoon of pepper
– Salt
– A quarter cup of chopped parsley

Procedure:
First, you need the broth, adding heat to a boil over high heat. Then rinse under cold water, barley and then add them to cook. Then you have to bring to a boil and then lower the heat, then simmer and leave covered until barley is starting to become tender. Do this for about an hour and a half.Finally, add the vegetables and cook for about 30 minutes or until vegetables become tender perfection. Besides this, you must mix the butter and pepper. Try and add some 'salt if necessary. Finally, add the parsley.

Macaroni and bean soup Ingredients:

– 1 cup dried beans
– Cold 4cups
– 1tablespoon olive oil or other edible oils
– 1large onion, chopped
– 1clove garlic, finely chopped
– 1 ½Cups finely shredded cabbage
– 2 large carrots, chopped
– 28-ounce can tomatoes
– 1 bouillon cube
– 1 and half teaspoon salt
– A quarter teaspoon of pepper
– Half a teaspoon of dried basil leaves
– 1 cup macaroni Shell
– 2 tablespoons chopped parsley

In principle you should immerse deeply beans overnight in cold water. Then the next day, you drain it by measuring the soaking water and then add enough water so that5 cups. Besides this, you need the beans in a large saucepan Rachael Ray and then add the 5 cups of water.
